 Burgos Suckling Lamb with P.G.I. Denomination of Origin
The suckling lamb is slaughtered early, when it is only 35 days old and its weight is no more than 12 kilos, so that the mother can be milked afterwards. The meat of the suckling lamb is very fine and juicy, it has a soft colour, creamy fat, and more so, the suckling lamb from Burgos due to the quality of the pasture in our province.

Of a pearly-white colour, this piece is the most appreciated part of the animal. A tender portion, with fine fibres, with little fat and very juicy. Because it is only fed with its mothers milk, it is easy to digest and it has a high biological value. It is ideal for barbecuing, cooked in the oven, coated in batter or fried.

It is weaned at around 45 days of age, with about 14-15 kg in live weight and later it is fattened to reach 22-23 kg in live weight and at about 90 days old (10-11 kgs in channel).
Its fat percentage is less than the suckling lamb since it looses weight and it lightly looses fat when moving from the milk to the concentrate (weaning crisis).

Pork meat is very lean an nutritive. The pigs grow rapidly and their gestation period is very short, some 115 days, for which they may have very numerous litters. Every part of the pig is used, it is characterised by its multiple varieties of meat.
